The caviar of Beluga (white sturgeon)
It is considered to be the best caviar in the world, the most rare and, therefore, the most expensive. The caviar of beluga is the most refined on taste and the most beautiful: its grains are large - up to 3,5 mm in the diameter, at squashing the white "milk" is allocated from them, and "glazok" (the embryonic substance) is lighter than the grain and is surrounded by the thin rim. This caviar is given by beluga and white sturgeon - by the largest of the sturgeon fishes. It is considered that beluga can live till one hundred years, reaching 9 meters in length and more than 1000 kgs of weight. The females of beluga give up to 15 kgs large-grained silver-black caviar. The caviar of beluga is traditionally let out in cans with light-blue covers.
About Beluga
Physically, this the largest sturgeon and simultaneously the only predator in the family. It is so rare that the annual beluga catch hardly ever exceeds 100 units. The Beluga is remarkably strong, vigorous, large-mouthed, and perpetually nomadic, stubbornly following its prey, shoals of whitefish. It can measure up to 30 feet in length and may weigh over 2,000 lbs. It yields about 15% of its weight in caviar.
